I have been trying out different recipes using coffe rubs. I just cannot seem to find a fish that it melds well with the flavor and pork has a lighter flavor that is hidden by the rub. I have come to the opinion that it is best when used with beef and chicken in a varity of ways. (Yes chicken also has a lighter flavor but it does not seem to absorb much of the coffee rubs taste, resulting in a nice outside crust flavor instead.) These coffee rub burgers were one of my first experiments and Zo really loved them. Enjoy!
Ingredients:
Coffee rub patties
1/2 lb ground chuck
1/2 lb ground sirloin
2 tsp coffee rub mix
2 tsp fresh cilantro (diced)
1 green onion (diced)
Burgers
4 slices apple wood smoked bacon (crisped, cut in half)
4 slices Colby cheddar
1/4 cup Raspberry chipotle salsa
4 potato buns
Fixings
4 slices red onion
20 pickled jalapeno sliced
mustard
mayonnaise
Burger Patties
Mix all burger patty ingredients together in a medium bowl and let site for 10 minutes.
Preheat grill to medium.
Separate patty mixture into 4 servings and form 1/4 inch patty by rolling each serving into a ball and then pressing flat. Place patties on heated grill and cook 3-4 minutes on each side or until desired doneness is reached. During the last 2 minutes of cooking dollop each burger patty with 1 tbsp of salsa and then place a slice of cheese over the salsa. (If you want your buns toasted I suggest also adding them to grill for the last 2 minutes of cooking.)
Burgers
Place burger patty on bun and top with bacon, onion and jalapenos. Finish up by placing top bun on burger and (add other tops if desired) enjoy!
