One of the best ways to have flounder is also one of the easiest! For years I have been trying a fancy flounder recipe for Zo... and failing at every turn. It should work but just doesn't. So I decided to go in steps to see what is going wrong. Step one is to pan fry some flounder. As you can see above that step works just fine and tastes great! Steps 2-4 are in my future but for right now, enjoy!
Ingredients:
Fish
2 flounder fillets
1/3 cup flour
Kosher salt (to taste)
white pepper (to taste)
1/2 cup olive oil
Toppings
1 Lemon (cut in half)
1 tsp fresh baby dill (diced)
1/4 cup yummy sauce
Preheat oil in a small to medium skillet over medium high heat.
Rinse fillets with cold water and then pat dry. Sprinkle fillets with salt and pepper and then dredge in flour. Add floured fillets to oil and cook for 1-3 minutes or until browning (depending on thickness.) Flip both fillets and cook for another 1/3 minutes or until a dark golden brown color has been reached.
Move fillets to a paper towel covered plate and let excess oil drain away. Move fillets to plates, sprinkle dill over the top of the flounder and spritz with fresh lemon juice. Serve with yummy sauce on the side. Enjoy!
