Chorizo Fiesta Dip

This Chorizo Fiesta Dip is nice and easy dip to toss together for a movie night or a potluck. It only takes 20 or so minutes to throw the whole thing together but it is hard not to taste test it all away before serving it!  Enjoy!

Ingredients:
Dip
7-8 oz Silva brand pork chorizo (or ground beef)
1 jalapeno (diced)
1/4 cup white onion (diced)
1/4-1/3 cup green onion (chopped)
1/4 cup cilantro (chopped)

Base
1/2 cup heavy cream
1 cup mayonnaise
1 1/4 tsp ground cumin
3/4 cup dice fire roasted tomatoes with chipotle peppers
1/2 cup 2 tbsp Pepper Jack cheese (shredded)
1 cup cheddar cheese (shredded)

Optional Garnish
3-4 sprigs cilantro
3 tbsp sour cream

Base
Mix together all base ingredients in a medium mixing bowl and sit aside.

Dip
Heat 2 tbsp olive oil in large skillet over medium heat until heated. Add chorizo/beef, white onion and jalapeno to skillet and cook for 10 minutes or until browning (if using beef add a little cumin, salt and pepper.)

Drain all but 2-3 tsp of oil from pan. Turn heat to medium low and add in the base mixture. Simmer for 5-7 minutes stirring occasionally or until cheese is fully melted.

Pour dip into a serving bowl, fold in cilantro and green onions, garnish and serve hot!
