These Bison steaks are a cinch to get ready and even easier to eat! Enjoy!
Ingredients
Steaks
2 (.33 lb) bison steaks
(Optional soaked apple wood chips)
Marinade
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tsp wasabi horseradish
1 tsp Chinese mustard
1 tbsp fresh whole rosemary
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp ground ginger
1/4 tsp ancho chili powder
fresh crack pepper (to taste)
Marinade
Mix all ingredients in a small mixing bowl and sit to side until ready to use.
Steaks
Prick bison steaks all over both sides with dinner fork, then lightly pound with a meat hammer. Place in a Ziploc, then pour marinade into Ziploc, seal and massage into steaks. Place steaks in Ziploc into refrigerator and let marinate for 6-8 hours.
Remove steaks from refrigerator and let rest on kitchen counter until they are room temperature.
Preheat grill to high heat.
(I added soaked apple wood chips before cooking.)
Place steaks on grill and sear for 2 minutes. Flip steaks and sear the other sides for 2 minutes.
Reduce heat to medium, flip steaks and cook for 3-4 minutes. Flip steaks and cook for an additional 3-4 minutes. Remove steaks from grill and cover with aluminum foil. Let rest for 10 minutes before serving. Enjoy!
