Francis' Strip N' Cheese Sandwich

This is a different take on my previous Beef N' Chedda Recipe.  Instead of using roast beef and cheddar I went with new york strips and hot wing cheddar!  In lieu of mushrooms I went with bacon!  As well as a couple more little changes. So different but the same but different enough that I decided to give it is own post.

Ingredients:
Sandwich Toppings
4 Onion rolls (toasted)
4 slices tomato
4 slices red onion (sauteed in bacon grease)
1/4 cup chipotle root beer BBQ sauce
4 slices bacon (crisped)

Sandwich Filling
1 (1.25lb) new york strip
2 tbsp heavy cream
1/4 cup mayonnaise
1/4 tsp cumin
1/4 tsp garlic powder
1/4 tsp cornstarch
1 green onion (chopped)
1/2 can rotel
1/4 cup 1 tbsp new york Buffalo hot wing cheddar (shredded)
2 tbsp 1 tbsp pepper jack (shredded)

Sandwich Filling
Preheat grill to medium high heat.

Rub steak with olive oil, then salt and pepper.  Grill for 4 minutes.  Turn steak and cook for another 4 minutes.  Move steak to top rack (or away from heat and continue to cook 2-3 minutes until desired doneness is reached.)  Let steak cool to touch and then slice into very think 1/8 inch slices.  Sit to side until ready to use. (While cooking steaks it is a good time to toast buns.)

In a medium mixing bowl whisk together mayonnaise, cumin, garlic powder cornstarch, green onion and rotel until even. Then fold in cheeses until even.

Heat a non-stick skillet over medium low heat.  Once heated add a little bacon grease or olive oil to skillet.  Add the mayonnaise cheese mixture to skillet and heat until cheese as fully melted (5-7 minutes) then add meat and heat through (about another 4-5 minutes.)

Build sandwiches and enjoy!
