Creole Catfish Melt

When I originally made my Catfish Salad it was for sandwiches and crackers.  When we ate our first sandwich I realized that it would be an utter shame not to try and make a melt out of the salad.  So the next day Zo and I popped down to the store and grabbed a couple of fresh Kaiser rolls and some cheese.  T he Creole Catfish Salad was great on a sandwich and crackers but amazing on these melts! If like us you do not mind your house smelling like a stinky fish, enjoy!

Ingredients:
1 1/2 cups Creole Catfish Salad
2 Kaiser rolls ( sliced in half)
4 slices baby Swiss or Gruyere cheese

Preheat Oven to 350 degrees.

Spoon Creole Catfish Salad evenly over the 4 Kaiser roll halves, then spread it out until smooth.  Place slices of cheese over each melt and place all melts on a baking safe sheet.

Place in oven and cook 15-20 minutes (or until cheese is bubbly and the rolls are toasted.)  Remove from oven and let cool 2-3 minutes.  Serve hot and enjoy!
