Sloppy Jose's

For about four years now I have joked about making Sloppy Jose's in lieu of Sloppy Joe's, well I finally turned that joke into a recipe.  I hope you love them as much as we did!


Ingredients:
19 oz Johnsonville chorizo (chopped)
1 lb ground turkey (crumbled)
1/2 cup habanero jack (shredded)
14.5 oz diced fire roasted tomatoes with chipotle
1 habenero (diced, optional for flavor and heat)
1/3 cup fresh cilantro (chopped)
3-4 green onions (chopped)
1 tbsp peanut oil
kosher salt (to taste)
fresh crack pepper (to taste)
fresh corn tortillas

In a medium skillet heat oil over medium heat.  Once oil is heated add meat and cook for 10 minutes stirring constantly.  Add habanero pepper and tomatoes cook for 10 minutes stirring constantly.  Add cheese, green onions and cilantro and gently fold for 3-4 minutes or until cheese has fully melted.

Heat fresh tortillas, spoon sloppy Jose mixture over tortilla and serve hot. Enjoy!
