We've both not had swordfish in so long we couldn't remember if we liked it or not. There happen to be some good looking fillets on sale, so I grab them up to find out. Zo and our friend that was over really enjoyed this recipe.
Ingredients:
2 swordfish fillets (5-6 oz apiece)
1/2 tsp orange zest
1/2 tsp lime zest
1/2 tsp kosher salt
1/4 tsp fresh dill (diced)
1/2 tsp lemon pepper
1 lime
garlic flavored olive oil for brushing
Preheat your grill to medium-high.
Mix seasonings and zest together in small bowl. Squeeze juice from the lime evenly over both steaks then rub mixture into both sides of each swordfish steak. Brush with olive oil and place on your grills middle rack directly over flame. Cook 2 to 3 minutes, then flip and cook another 2 to 3 minutes. Remove the swordfish from the grill and transfer to a room temperature plate and serve.
For added flavor make some of our Citrus Mint vinaigrette and drizzle a bit over each steak before serving. This meal also pairs well with our Citrus Herb Salad (sides/salads label) that uses the same dressing.
Hmm never had swordfish... Arr sounds kinda scary too. Nevermind me! Hey, I think salmon trout might be delish with this recipe also... what do you say Fran?
Actually I am not a fan of swordfish haha but I cook many things that I would rather not eat because, I can. Also you never know what your tastebuds are going to lobe. I just do not like the flavor. I believe that salmon or tuna would work really well with this. Also flounder or halibut would probably taste great with the citrus pepper rub, but instead of olive oil I would coat the flounder in butter.
This recipe look good. I definately want to cook.
