This potato salad was a huge hit at Zo's graduation BBQ. I actually had to save some just so I could get a photo of it!
Ingredients:
6 cups Red potatoes (chopped)
1/2 lbs turkey bacon (crisped and crumbled)
2 thick slices of smoked bacon (crisped and crumpled)
1/2 cup celery (diced)
5 hard boiled eggs (chopped)
2 cloves garlic (minced)
1 1/2 tbsp fresh Italian parsley (chopped)
1 cup sweet onion (chopped)
1 3/4 cup mayonnaise
kosher salt (to taste)
fresh crack pepper (to taste)
In a large stock pot bring water to boil and cook potatoes for 15-20 minutes. Drain and chop.
(While potatoes are cooking I usually hard boil my eggs and crisp my bacon as well.)
Combine all ingredients in large mixing bowl and gently fold till mixed well. Cover and place in refrigerator for 1-2 hours before serving.
Serve with fresh chives sprinkled over the top for a pretty garnish and added flavor.
Oh... maybe it's not a great idea to browse your yummy food on a 5 am. Noted.
