Lumberjack Breakfast Sandwich

A while back we were out to breakfast and as I perused the menu I came across the Lumberjack Breakfast. It consisted of eggs, bacon, sausages, a slab of ham and your choice of flapjacks or toast with maple syrup. I was trying to decided what to make myself for breakfast this week and I decided I'd turn that menu item into a rather unhealthy sandwich. Instead of using maple syrup I went with maple sausages. The result is a pretty tasty breakfast sandwich. I'd really expected this to be one of those ideas I tossed out the window after taking a bite. Who knew the next day I would be making it again with flapjacks as my bread (minus the ketchup and Swiss.) I really liked it both ways! I would like to put a Surgeon General warning out there, anyone wanting to keep their arteries unclogged and avoid obesity do not eat this sandwich often. I felt full all day long after eating this monster!

Ingredients:
3 maple breakfast sausages
3 slices turkey bacon
2 slices of deli ham
1 egg
1 slice of Swiss (optional if using flapjacks)
2 slice of stone ground wheat bread or two flapjacks
ketchup (optional if using toast)
fresh crack pepper (to taste)

Preheat medium skillet over medium high heat. Place bacon, sausages and ham into skillet, crack pepper over the tops of the meat, cook meats flipping occasionally till turkey bacon is crisping (6-7 minutes.) Remove meats from skillet, crack egg into pan, crack pepper over egg and cook desired style (easy over, etc.) While egg is cooking toast bread or heat up flapjacks. Once egg is finished put together all items in desired order. (If using toast I highly recommend a slice of Swiss and a little ketchup.)

Serve with a glass of orange juice and enjoy!
