I was fooling around with red bell peppers and artichoke hearts when I came up with this scrumptious and easy warm dip that is good for any occasion! Even better this idea led me to a vodka sauce that is just to die for! Go out and experiment after munching down on this great dip!
Ingredients:
2 green onions (diced)
2 cloves garlic diced
1 jar artichoke hearts marinated in oil (diced)
1 tbsp 1 tsp white balsami vinager
1 1/2 tsp Parmesan (freshly grated)
1 1/2 tsp Romano (freshly grated)
kosher salt (to taste)
Fresh crack pepper (to taste)
In a small skillet heat 3 tbsp of the oil from the artichokes over medium heat. Once heated add bell peppers, onion, salt, pepper and garlic and saute for 7 minutes.
Add vinager, Parmesan and Romano and heat for 2-3 more minutes or until cheese begins to melt. Once cheese is melting pour into a serving dish and mix with artichokes.
Serve with tortilla chips or crackers, enjoy!
