Zo made up this quiche after asking me what I wanted in it. I told her just thrown in every thing that looks like might go bad soon. I softly laughed at myself as I said, "We will just call it the Kitchen Sink Quiche." So we did! After it was ready to eat and I took my first bite I was very surprised, it tasted like I cooked it. Have you noticed that? You can tell who cooked something if they cook for you frequently? I can tell if my mother, father, sister, Zo or grandparents cooked something or it was one of their recipes. I know what Zo's foods taste like but it tasted like something I made. She asked me why I had a strange look on my face so I said puzzled, "This tastes like I made it." Zo replied, "I used your recipe on Cooking for Zo to make it." Cooking for Zo in our house has become an easy way to remember how we made something and an easy way to make other recipes from. It has to be the easiest home cookbook I have ever made! So enjoy this quiche that Zo made that taste like I made it!
Ingredients:
2 eggs
1/2 cup milk
1/2 cup half and half
1/4 cup yellow squash (sliced)
1/4 cup zucchini (sliced)
2 tbsp red onion (chopped)
1 green onion (chopped)2 tbsp green chilies (diced)
1 cup white cheddar (shredded)
1/2 cup chipotle cheddar (shredded)
1/4 cup pepper jack (shredded)
1/4 cup aged Swiss (shredded)
2 tbsp Parmesan Reggiano (finely shredded)
1/2 tsp fresh rosemary (diced)
1 tsp fresh Italian parsley (chopped)
1/4-1/2 tsp fresh crack pepper medley
pinch of kosher salt
pinch of nutmeg
pinch of Cayenne
1 tsp flour
Preheat oven to 375 degrees.
In a small skillet melt butter over medium heat. Once melted season, then saute green onion, yellow squash, zucchini and red onion for 6-8 minutes. Remove from heat and pour into a large mixing bowl. using a wooden spoon, fold in remaining ingredients until mixed well. Pour mixture into an 8 inch square baking dish and bake for 35-40 minutes or until you can stick a butter knife into the center of quiche and pull it out clean.
Serve hot or chilled for breakfast, lunch or dinner.
