We wanted some Miso soup but we wanted to make it a little different than usual so we tossed in some Shataki mushrooms. They added a nice full flavor to the Miso soup that made it go great with the wraps we had along with it for dinner. Enjoy!
Ingredients:
1 1/2 tsp dried wakame
1 3/4 cups water
1/2 tsp dashi flakes (ground)
4 1/4 oz soft tofu (cubed)
2 large green onions (chopped)
1/3 cup shataki mushrooms (chopped)
1 1/2 tbsp miso paste
Soak wakame in small bowl of water till expanded.
In a medium sauce pan heat 1 3/4 cup water and dashi flakes together over medium high heat for 3-5 minutes.
Remove 1/2 cup of heated dashi water and pour into a medium mixing bowl. Add Miso paste and whisk until smooth. Whisk this back into the sauce pan along with the mushrooms and tofu and cook for 2-3 minutes. Turn heat down to medium low and add wakame and onions to sauce pan, cooking for 4-5 or until all ingredients are heated through (make sure not to let boil.)
Ladle into bowls and serve hot!
