This hot sandwich is the product of many leftovers. We had left over baguette bread, leftover lemon garlic butter from some crab, left over peppers from some stuffed bell peppers and cheeses that needed to be eaten. I took what we had and made one hell of a great hot sandwich. This is one of those hot sandwiches that you can see yourself eating every lunch of the week, even though you know it must not be healthy to do so. Enjoy!
Ingredients:
12" loaf of French baguette Bread (freshly baked)
1/4 cup pepperoncini (chopped)
1/4 cup Orange bell pepper (sliced)
1/4 cup Green bell pepper (sliced)
1/4 cup Red onion (diced)
2 slices Pepper Jack (folded in half point to point)
1 slice Colby Cheddar (folded in half)
1 slice provolone (folded in half)
4-6 deli cut slices of Italian flavored smoked ham or roast beef
1/4-1/2 tsp Fresh crack pepper
1/4 tsp Francis' Essence
1 tsp olive oil
Mayonnaise (optional)
Mustard (optional)
Lemon Garlic Butter
1/4 cup butter (melted)
2 garlic cloves (minced)
1/4 tsp garlic powder
1 tbsp lemon juice
Butter
Mix melted butter together with other ingredients and sit to side until ready to use.
Peppery Sandwich
Using a bread knife slice french baguette bread down center and then cut in half to make two 6 inch sandwich buns.
In a 10 inch skillet heat olive oil over medium heat. Once heated add onions, peppers and seasonings sauteing for 5-7 minutes. Remove onions and peppers from skillet, wipe skillet out with a paper towel and place back on burner.
(Spread mayonnaise and mustard over bread if using.) Lay 1/2 of provolone slice on the bottom of each bread slice. Then spread out 1/2 of the pepper/onion mixture over each slice of provolone. Add ham or roast beef slices to sandwiches, then 1/2 of Colby per sandwich followed by pepper jack. Add tops of bread and mush the sandwich down as hard as you can!
Add 1/2 of the lemon butter to the skillet and once starting to melt add both sandwiches to the skillet. Cook for 6 minutes, then flip, add other half of lemon butter (turn sandwiches in butter,) squishing down with wooden spatula as flat as possible and continue to cook for 6 minutes or until both sides are crisp (may have to flip and cook each side another minute or two to reach your desired crispness.) Serve while still hot and enjoy!
