Santa Maria Fritatta

It isn't Columbus day but I recently ate some Columbus hard Salami. Which got me thinking about the Nina, the Pinta and the Santa Maria. Out of the three names Santa Maria is the fun one to say in my opinion. So I set out on the great adventure of creating a Fritatta that would taste as good as Santa Maria sounds! There were many perils to overcome: broken eggs, shredded cheese and sliced meat but I quested ever forward until I was about to grasp victory and deliver you this recipe. Enjoy!

Ingredients:
4 eggs
1/2 2.5 oz can diced green chilies
1 tbsp whole milk
1/3 cup red onion (chopped)
1/3 cup green bell pepper (chopped)
1/4 cup chorizo salametto (chorizoed salami, sliced)
2-3 cherry tomatoes (diced)
1/3 cup roasted garlic cheese (shredded)
1/3 cup mild cheddar (finely shredded)
1/4 cup white cheddar (finely shredded)
1 tbsp fresh cilantro (diced)
1/8 tsp garlic powder
fresh crack pepper medley (to taste)
2 tsp butter

Whisk together eggs, chilies, garlic powder, pepper and cilantro.

Over medium heat melt butter in a 10 inch nonstick pan. Once melted cook onion, tomatoes, salami, green bell pepper for 5 min. Follow previous frittata instructions.

In medium mixing bowl whisk eggs together with seasonings, chilies, milk and cilantro. Pour mixture evenly over onion mixture and cook for 6- 7 minutes.

While frittata is cooking on stove stop preheat oven to broil. Spread cheese over frittata and broil 3-4 minutes (after removing from broiler I sprinkle a little fresh cheese over the frittata.) Cut into slices and serve this hearty breakfast hot out of the broiler!
