Do you like hash browns? What about french fires? What if you could have them both, at the SAME TIME?!? Sound like a bad infomercial where you can buy the recipe for only three easy payments of $19.95? Well don't worry the recipe is free! You can enjoy them today for absolutely nothing but some time in the kitchen.
Ingredients:
1 very large red potato or two medium ones (sliced into then fries)
1/2 yellow bell pepper (chopped)
1/4 cup shallot (diced)
2 garlic cloves (minced)
1 1/2 tbsp sweet European butter
kosher salt (to taste)
fresh crack pepper (to taste)
1 tbsp ketchup
1 tbsp sriracha (optional)
In a large skillet melt 1 tbsp of butter over medium high heat. Once melted add fries and cook for 7-10 minutes, flipping with a wooden spatula often. Once all fries are just starting to brown, turn heat down to medium, add the rest of the butter and ingredients and continue to cook for 5-7 minutes or until bell pepper starts to turn tender (you want it to have a little crispness left to it.)
Remove breakfast fries from skillet, drizzle with ketchup (and sriracha if using) and serve hot. Enjoy!
