Do you ever eat food and wonder where it comes from? I constantly look up foods and where they are from relative tome in the world. I had no idea that Sweet vine mini peppers ares a hybrid sweet pepper that were originally developed in the late 1990s by Bionova Produce Inc. They were created because of the "mini" trend around then that is still grabbing attention in the produce arena. Who knew that their was a mini trend in the produce arena? Will we have mini eggplants and bite sized bananas next? I am not really for or against Genetic research when it comes to produce. I mean seriously who does not love navel oranges? No seeds but they still taste great but then you get duds like personal watermelons that loose as much flavor as they do size. But then you get marvels like the grapple. I love how it is an apple that smells like a grape. It is interesting and while it will never replace grapes or apples I can still enjoy it. Anywho, now we both know where sweet vine mini peppers come from and it is up to you to decide whether or not you want to use them. So if you want a great salad built around a genetically engineered pepper, then enjoy!
Ingredients:
4 large Yellow sweet vine mini pepper (seeded, sliced)
4 large Red sweet vine mini pepper (seeded, sliced)
4 large Orange sweet vine mini pepper (seeded, sliced)
1/2 cup Salami nuggets (quartered)
3 tbsp Red onion (diced)
2 tbsp sun dried tomatoes in oil (chopped)
3 garlic cloves (diced)
2 tbsp Pine nuts (optionally toasted)
3 tbsp Fresh Italian Parsley (chopped)
1/2 tsp Parmesan (freshly grated)
1/2 tsp Romano (freshly grated
Dressing
1 tbsp extra virgin olive oil
1/2 tsp cider vinegar
3/4 tsp red wine vinegar
2 tsp whole grain mustard
1/4-1/2 tsp kosher salt
1/2 tsp fresh crack pepper
1 tbsp oil from the sun dried tomatoes
Dressing
Whisk together all ingredients in a small bowl.
In a large bowl mix together all ingredients. Toss together with the dressing and let chill for 10-15 minutes. Serve cool to cold. Enjoy!
