When having seafood you don't usually want a salad that is going to over power your main dish. This is a great side salad for that purpose. It is light yet still flavorful with just a little sweetness to it. It goes well with lobster, crab or shrimp. For most fish I actually suggest a little bit stronger side salad. Enjoy!
Ingredients:
2 medium zucchinis (sliced)
1/2 of a large red bell pepper (Juliane)
1/3 cup carrot (shredded)
1/4 tsp garlic powder
2 tsp lemon juice
1 tsp sweet European butter (melted)
fresh crack pepper (to taste)
pinch of kosher salt
2 tsp olive oil
Toss vegetables with lemon juice, butter and seasonings. In a medium skillet heat olive oil over medium high heat. Once heated add vegetable mixture and cook for 5-6 minutes stirring often. Slide vegetables onto plates and enjoy.
