I am a huge fan of beef and cheddar sandwiches. In my early years of college I had a roommate that made them constantly and I had no problems eating them constantly in turn. For the last few years I have been wanting to make up my own beef and cheddar sandwich. I just never new where to start. I mean really how many ways can you make a beef and cheddar sandwich? You have a bun, roast beef and cheddar sauce... it is not rocket science! So I pondered for a while what is my favorite part of a beef and cheddar, then it hit me the sauce, I love the sweet BBQ sauce you have with them. It was then I decided my beef and cheddar would focus on the BBQ sauce. I also love making special BBQ sauces for meals and I have to say that did sway my thinking. Another important aspect of the Beef and Cheddar is the cheese sauce or cheese you use. I really like the consistency of my beef and Cheddars to be all about the meat. That is why I tend to use a cheese sauce not just slices of cheese. I took both of these basic concepts about the classic beef and cheddar and made Frank's Beef N Chedda, I do hope you enjoy!

Ingredients:
Sandwiches
1 lb Roast beef
1/2 cup yellow onion (Juliane then halved)
2-3 slices pancetta (diced)
4 onion rolls
1 tbsp butter
Cheese Sauce
4 oz cheddar (shredded)
1/4 cup heavy cream
1/3 cup mayonnaise
2 tbsp 2 tsp sour cream
1 purple jalapeno (seeded, diced)
1/4 tsp ground cumin
2 tbsp green onion (chopped)
BBQ Sauce
1 tbsp extra virgin olive oil
2 cloves garlic (minced)
1/4 tsp Chile Powder
1/4 tsp cumin
2/3 cup ketchup
1 tangerine juice
2 tsp tangerine pulp
1/2 tsp clover honey
1 tsp soy sauce
2 tbsp water
2 tsp teriyaki sauce
2 tbsp red wine vinegar
1/2 tsp fresh crack pepper
1/4 tsp liquid smoke (mesquite)
BBQ Sauce
In a small sauce pan warm olive oil over medium heat. Add garlic, Chile powder and cumin and cook for 30 seconds while constantly whisking. Whisk in the remaining ingredients and cook uncovered stirring often for 5 minutes (or until thickened.)
Cheddar sauce
Mix together all ingredients except green onions and jalapeno in a medium mixing bowl and sit aside. Heat 2 tbsp olive oil in large skillet over medium heat. Once heated add jalapeno and green onion and cook for 5 minutes. Turn heat to medium low and add in the sauce mixture. Simmer for 5 minutes stirring occasionally or until cheese is melted and cheese is fully melted.
Sandwich
In 1 tbsp butter saute mushrooms and onions over medium high heat for 5-7 minutes. Remove and keep warm. Add pancetta and cook for 2-3 minutes over medium heat, add roast beef and warm for 5 minutes. Toast buns.
