The Pro-lami was actually meant to be a Fried Bologna sandwich. Zo and I have picked up some prosciutto and some Mortadella from Whole foods only to have the bologna spoil in a few days. Zo said, "What about a salami sandwich?" So I said, "Sure thing." Tossed some prosciutto and went to town. Neither one of us expected the, "AWHE MEH GAWD, THISM SUOO GUD!" We mumbled with full mouths. I am still not sure why this sandwich was so dang good?!? But damn you gotta try it!
Ingredients:
Sandwich
2 slices picante prosciutto (deli Sliced)
8 slices dry italian salami (1/8 inch thick sliced)
1-2 tbsp French's mustard
1/3 cup arugula
2 multi grain thin buns
2 slices chipotle jack cheese
Mayo Sauce
1/3 cup mayonnaise
2 garlic cloves (sauted and chopped)
2 tbsp red or white onion (sauted and chopped)
1/8 tsp cumin
1/4 tsp lemon juice
1/8 tsp dry mustard
2 tsp olive oil
Mayo Sauce
In a small sauce pan heat oil over medium heat. Once heated saute onions and garlic for 5-7 minutes. Remove from heat and pour mixture into a small mixing bowl. Stir together with the remaining ingredients and chill until ready to serve (it is also good at room temperature.)
Sandwich
Preheat a nonstick skillet over medium low heat. Add prosciutto and cook for 2 minutes. Add your salami and cook for 2 minutes, flip all with a wooden spatula (so that the prosciutto ends up on top and continue to cook for another 3-4 minutes. (While salami and prosciutto are cooking spread your mustard and mayo sauces over your thin buns.) Remove the salami and prosciutto from your skillet and using a paper towel wipe away excess oil.
Lay prosciutti slices and salami slices onto your bottom buns, top with arugula and then cheese. Add your top buns and move your sandwiches back to the skillet (you can skip this step if you do not feel like toasting your bun in the skillet.) Toast both sides of sandwiches for 2-3 minutes and enjoy!
