This has to be one of my odder fusion cuisine ideas. I mean who mixes Greek and Mexican cuisines? I may truly be the only person on this planet that has ever tried it. And while Zo and I both enjoyed these Greek Quesadillas but I realize they are not for everyone! So those adventurous foodies out there should try them out but those of you that are squeamish about new things stay far away!
Ingredients:
3 red chili 8 inch toritllas
1 large green onion (diced)
3 tbsp lamb chop (cooked, diced)
2.5 oz chevre goat cheese
1/3 cup white cheddar (shredded)
1 tbsp green chili salsa
1 shallot (diced)
1/2 of a fresh lemon juice
1 tbsp butter
Preheat a 10 inch nonstick skillet over medium heat.
Mix together cheeses, onion, shallot, lamb and salsa in a medium bowl. Spread mixture evenly over 3 tortillas. Fold tortillas in half and rub the outsides of the quesadillas evenly with the butter. Heat both sides of all the quesadillas for 4-5 minutes or until they begin to brown.
Cut into slices, squeeze fresh lemon juice over them, serve hot and enjoy!
