You can make this tasty meal with either Pablano or Anaheim peppers, it is really up to you. They both have distinct but great flavoring. I feel the poblanos go a bit better when paired with lighter foods and the Anaheim peppers when paired with heavier foods. Either way they are great, Enjoy!
Ingredients:
2 poblanos or 4 anaheim peppers (tops removed and cored out)
1/4 cup red onion (diced))
1/4 cup cilantro (chopped)
4 oz Monterrey jack cheese (shredded)
1 Fresno or Jalapeno pepper (seeded, diced)
Preheat grill to medium-low. Place stuffed peppers at an upward angle (so all the stuffing does not drip out) on the top rack of the grill and cook for 4-6 minutes. Flip peppers and continue to cook at an upward angel for 4-6 more minutes. Remove from grill and serve once they have cooled enough to be eaten. Enjoy!
