Zo and I have both been wanting fried chicken for months. I do not know why it took us so darn long to get around to making it but we finally did! This Spicy Fried Chicken is really close to my New Mexican Chicken Fried Steak Strips. Why is that? Because I really love this style of batter on my fried foods! Enjoy!

Ingredients:
6-8 pieces of chicken (your pick, we like breast, thigh and drumsticks)
4-5 cups peanut oil
Coating
1 cup all-purpose flour
1 1/4 tsp smoked paprika
1 tsp white pepper
3/4 tsp red pepper flakes
1 1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cumin1/2 tsp onion powder
1 1/2 tsp fresh crack pepper
kosher salt (to taste)
Wash
2 egg
2/3 cup butter milk
2 pinches essence
Kosher salt (to taste)2 pinches essence
Fresh crack pepper (to taste)
Wash
Coating
Whisk together all coating ingredients in a shallow bowl until mixed well.
Chicken
Dredge the chicken pieces in the flour mixture and shake off the excess mixture. One at a time dip each piece into the wash and then back in the flour. Set strips aside on a piece of wax paper.
Pour peanut oil into a large cast iron dutch oven until it is one inch deep and then heat over medium-high heat for 5-7 minutes. Once heated using tongs carefully place 3 pieces of chicken one at a time into the skillet and fry for 4-5 minutes flip and cook for an additional 4-5 minutes or until golden brown and cooked through. Drain chicken pieces on paper towel covered plate.
Once all pieces are cooked and drained serve hot with our Sweet Chipotle Lime Dippin Sauce, BBQ sauce or your favorite sauce! Enjoy!
