These sandwiches are a bit on the abnormal side, so why not call them "Abby Normal" Sandwiches! Zo and I really loved these but due to the really uncommon flavor pairing with a super side of zing to your taste buds I feel they probably are not recommendable to every one's tastes. If you are feeling adventurous then try these out! If not try something a little simpler. Enjoy!
Ingredients
Sandwich
1 10 oz longaniza
1 lemon
Sandwich rolls (I used toasted french bread)
Sauce
1 avocado (diced)
1/2 of a limes juice
2 tsp butter (melted)
1/4 tsp red pepper flakes
1/4 tsp ground coriander seed
1/4 tsp garlic powder
1/4 tsp chipotle chili powder
1/4 tsp cumin
1/2 tsp kosher salt
Sauce
Whisk all ingredients together in a small bowl until even. Sit to side until ready to use (you may want to give the sauce a quick whisk before using.)
Sandwich
Heat a cast iron skillet over medium heat. Once heated cook longanzia 5 min on both sides. While still in cast iron carefully split the longanzia down the center and then cut into 4 equal pieces. squeeze fresh lemon juice over the open side of the meat (into the slit you cut.) Continue to cook for 3 minutes per side.
Move meat to toasted sandwich rolls and drizzle with as much sauce as you desire. Enjoy!
