This bean dip is not going to win any awards, most of the ingredients are prepackaged... but I love it! Sometimes you just want to make something super simple when you are heading over for a party. Something that takes you less than 25 minutes to prepare and package up. Well this is one of my recipes when I have no time but want something that tastes great!
Ingredients:
Dip
9 oz Don Juan New York style chorizo
1/2 cup roasted corn (thawed from the frozen food section at Trader Joe's)
1 (7 oz) can chipotle peppers in de arbol sauce
1 (16 oz) can jalapeno re-fried beans
1/3 cup sharp cheddar or chipotle cheddar (optional)
Garnish
1/2 jalapeno (seeded, diced)
2 green onions (chopped)
1/4 cup fresh cilantro (chopped)
Topping
1/4 cup sour cream or Greek yogurt
Garnish
Toss all ingredients together in a medium bowl and sit to side until ready to use.
Dip
In a 10 inch non-stick skillet over medium cook chorizo and corn for 7 minutes stirring constantly. Mix in the beans and chipotle peppers and let cook for 7-10 minutes or until chorizo is cooked through. Pour mixture into a medium bowl and fold in cheese.
Spread garnish over the dip and then dollop the sour cream over one side of the dip. You are ready to serve with chips or on tortillas! Enjoy!
