These New Mexican Taquitos are a nice simple meal for a nice simple evening. They are also a great little finger food snack to serve at a party or before dinner! I hope you enjoy!
Ingredients:
3 (10 inch) flour tortillas
3 oz Beef chorizo
1/2 of a Jalapeno (diced)
3 green onions (diced)
1/4 cup fresh cilantro (chopped)
1/2 cup medium cheddar (shredded)
3/4 cup vegetable oil
Cook chorizo in 10 inch skillet for 5 min over medium low heat, stirring often. Add jalapeno and green onions and continue cooking and stirring for another 4-5 minutes.
Remove mixture from heat and let cool for 3 minutes. Add mixture to a medium bowl and toss with cilantro and cheese until even. Spread mixture evenly out over 3/4 of each of the tortillas. Roll each Taquito up and press down on the overlapping fold to help secure.
Wipe out any left over bits from the 10 inch skillet and then add oil. Cook all taquitos for 2 minutes, then flip them and cook for another 2 minutes or until golden brown.
Let cool for 1-2 minutes before serving with salsa, guacamole and sour cream. Enjoy!
