When waking up from a nice long day of fishing what better way is there to start a new day with some of the prior days catch? None in my opinion! Whether you or someone else caught the flounder you are sure to enjoy this flounder scramble!
Ingredients:
1 flounder fillet2 eggs
2 tbsp olive oil
1 tbsp white truffle oil
1 lemons freshly squeezed juice
1 tsp fresh baby dill (diced)
2 tbsp yummy sauce
fresh crack pepper (to taste)
kosher salt (to taste)
In a small skillet heat oils and lemon juice together over medium heat. Once heated sprinkle pepper and salt over flounder and cook for 6-7 minutes. Using a wooden spatula break flounder into small pieces and then whisk in 2 eggs eggs. Cook for 5-7 minutes stirring often until scramble is formed and cooked to your liking.
Move scramble to plate and sprinkle dill over the top. Serve with yummy sauce on the side or over the top of the scramble and enjoy!
