Ingredients
Chicken
4 chicken thighs (skin on)
1/2 sweet onion (sliced into 1/2 inch wedges)
1/2 red onion (sliced into 1/2 inch wedges)
Rub
1 tbsp 1 tsp sweet paprika
1/2 tsp smoked paprika
1/4 tsp hot paprika
1/4 tsp cayenne
1/2 tsp cinnamon
1 tsp kosher salt
fresh crack pepper (to taste)
1 tbsp olive oil
Rub
Mix all ingredients together in a small dish until even.
Chicken
Pre-heat oven to 475 degrees.
In a medium mixing bowl, evenly massage rub onto all chicken thighs and onions. Place chicken thigh and onion mixture into baking safe casserole dish. Bake for 35-40 minutes or until chicken is cooked through.
Remove chicken from oven and let cool 7 minutes before serving hot. Enjoy!
