These Portuguese Breakfast Burritos are great for breakfast but perfect for brunch! I based them off the idea, "What would I make for brunch if I was a Portuguese farmer and gardener." With that thought in mind I went to cooking up some tasty breakfast grub! Enjoy!
These Portuguese Breakfast Burritos are great for breakfast but perfect for brunch! I based them off the idea, "What would I make for brunch if I was a Portuguese farmer and gardener." With that thought in mind I went to cooking up some tasty breakfast grub! Enjoy!
Ingredients:
Filling
8 corn tortillas (fresh or reheated)
4 large eggs
1/4 tsp essence
1 lemons juice
6.5 oz smoked linguica (sliced)
1/3 of red onion (chopped)
1/2 of white onion (chopped)
1/3 cup cilantro (chopped)
kosher salt (to taste)
fresh crack pepper (to taste)
2 tbsp butter
Toppings
1/2 cup Red leicester (shredded)
Sour cream
Salsa
Avocado
Cilantro
Heat butter in a large skillet over medium heat. Once melted add all ingredients except eggs and essence, cooking folding constantly for 12-14 minutes. Move mixture to one side of skillet and add eggs and essence to empty side of skillet. Scramble for 5-6 minutes. Once eggs are cooked fold all ingredients together and serve hot on heated tortillas with sour cream, salsa and cheese!
