This recipe was an experiment in combining Mediterranean flavors into a frittata. All in all I am very happy with the results and hope you enjoy!
Ingredients:
6''x9'' piece of Lavash bread.
3 large eggs
3 tbsp half and half
1/4 cup goat cheese (crumbled)
1/4 cup extra sharp (cheddar)
7 Kalamata olives (pitted, halved)
1/3 cup red onion (sliced)
1 garlic clove (minced)
1-1/2 tsp fresh rosemary (diced)
1-1/2 tsp fresh thyme (diced)
1/4 tsp essence
kosher salt (to taste)
fresh crack pepper medley (to taste)
2 tsp unsalted sweet European butter
In a small bowl mix together 1 tbsp of the goat cheese, garlic and 2 kalamata olives by mushing them together with a fork until an even paste is formed. Evenly spread this paste over one side of the Lavash bread.
In a medium mixing bowl whisk together eggs, half and half and essence until fluffing.
Preheat oven to broil.
Heat butter in an oven safe 10'' skillet over medium heat. Once melted and bubbly, add Lavash bread pasted side up and heat for 2-3 minutes. Sprinkle 1/2 of red onions over bread, pour the egg mixture evenly over bread, then sprinkle the remaining red onions over the egg mixture. Let cook for 4-5 minutes.
Once egg mixture is beginning to firm up sprinkle with remaining cheeses, olives, rosemary and thyme, then place skillet in the oven and let broil 2-3 minutes (or until eggs are fully cooked through.)
Using a spatula slide Mediterranean Frittata on to plate, sprinkle with salt and pepper and enjoy!
